A burger or salad is now built on its plate. The cook fetches the plate first, then lays everything that goes on it in a row at the back of the prep table. Each piece goes onto the plate in turn: for a burger, the bun, then the patty, then the cheese, lettuce, tomato and onion. Before, four piles sat around the table and swapped places whenever the cook turned.
Drink orders are the servers' alone now, so a drink left waiting 45 seconds moves up level with taking orders. Over 10 test seeds, a quarter-hour now serves 51 guests instead of 58: the three servers pour every drink themselves.
A second cook waiting on an empty container at the prep rail now stands beside the rail instead of on the first cook's tile.
